Pancakes!!!

As pancake day is coming up, I was really looking forward to making pancakes! I went to the shop to buy special gluten free flour only to realise that I accidentally brought self-raising rather than plain *whoops* so I had to adapt my plan and make American-style fluffy pancakes. I saw a recipe on BBC food and adapted it to work with the ingredients I had.

Ingredients:
  • 135g Self raising flour
  • 2 tbsp sugar
  • 130ml milk (I used almond milk)
  • 1 beaten egg
  • Oil for frying
  • Toppings eg. Maple syrup

Method:
  1. Sift the flour and caster sugar into a bowl.
  2. In a separate jug whisk together the milk and egg.
  3. Pour the milk mixture into the flour mixture and beat together until all the lumps have disappeared.
  4. Heat a frying pan and add a bit of oil.
  5. Once the frying pan has heated up add a ladle of batter.
  6. Wait until the top of the pancake is bubbling, then flip over with a spatula.
  7. Once both sides of the pancake are golden brown and the middle is cooked, remove from the frying pan.
  8. Serve with toppings.

Comments:
  • Make sure that the smoke alarm isn't too close as I managed to set the smoke alarm off.
  • Make sure that the pancake is cooked the whole way through, they take longer to cook than thin pancakes.
  • I have tried this pancake with bacon and maple syrup and it was amazing.
  • These pancakes have become my staple weekend breakfast.
