Pancakes!!!
As pancake day is coming up, I was really looking forward to making pancakes! I went to the shop to buy special gluten free flour only to realise that I accidentally brought self-raising rather than plain *whoops* so I had to adapt my plan and make American-style fluffy pancakes. I saw a recipe on BBC food and adapted it to work with the ingredients I had.
Ingredients:
- 135g Self raising flour
- 2 tbsp sugar
- 130ml milk (I used almond milk)
- 1 beaten egg
- Oil for frying
- Toppings eg. Maple syrup
Method:
- Sift the flour and caster sugar into a bowl.
- In a separate jug whisk together the milk and egg.
- Pour the milk mixture into the flour mixture and beat together until all the lumps have disappeared.
- Heat a frying pan and add a bit of oil.
- Once the frying pan has heated up add a ladle of batter.
- Wait until the top of the pancake is bubbling, then flip over with a spatula.
- Once both sides of the pancake are golden brown and the middle is cooked, remove from the frying pan.
- Serve with toppings.
Comments:
- Make sure that the smoke alarm isn't too close as I managed to set the smoke alarm off.
- Make sure that the pancake is cooked the whole way through, they take longer to cook than thin pancakes.
- I have tried this pancake with bacon and maple syrup and it was amazing.
- These pancakes have become my staple weekend breakfast.
